According to Jade Chapters (Yupian), this is a type of curd. According to Collected Rhymes (Yunhui), it is a class of dairy products made from cow or sheep milk, with cow milk curd being superior.
According to Secrets of the Emaciated Immortal (Quxian Shenyin Shu), the method of preparation is: place milk into a cauldron, boil it two or three times, and pour it into a basin. Once it has cooled and a layer forms on the surface, collect this layer and boil it again. Once the oil has separated and the dregs are removed, pour it into a pot to produce clarified butter. In the north, it is called ma si ge.
