Tang Rhymes (Tangyun): Pronounced jiang. Collected Rhymes (Jiyun), Rhyme Compendium (Yunhui), and Orthodox Rhymes (Zhengyun): Pronounced jiang.
Explanation from the Shuowen Jiezi: Originally written as the character for 'will' (jiang), meaning vinegar or starch liquid. Another theory states it is a mixture of water and rice essence.
Book of Rites (Zhouli), Offices of Heaven (Tianguan), Wine Administrator (Jiuzheng): Distinguish the materials of the four types of beverages; the third is called jiang.
Also, Jiang is the name of a river. Commentary on the Water Classic (Shuijingzhu): The Shaopei reservoir flows east into the Jiang River.
