Correction of Characters (Zhengzitong): The dumplings commonly made by the people today are prepared by grinding rice or wheat into fine powder and mixing it with maltose; they vary in moisture and size. Water dumplings are what are recorded in the Foodstuffs (Shipin) by Duan Chengshi as boiled dough morsels. Some refer to them as flour horns. Northerners pronounce the word horn like jiao, hence they are called dumpling bait, which was mistakenly passed down as dumpling child. Dumplings do not belong to the category of maltose, and jiao is not the correct pronunciation for the character.
