According to the Sound Dictionary (Jiyun), it is pronounced zhe. To grind rice into fine powder to be used in making beverages. Another interpretation refers to being thick or viscous. Furthermore, the Essential Techniques for the Welfare of the People (Qimin Yaoshu) records the method for making this substance: pour one liter of boiling water over one dou of rice.
