In Broad Rhymes (Guangyun), it refers to wine leaven. In Collected Rhymes (Jiyun), it refers to wine dregs. According to the Correct Meaning Through Characters (Zhengzitong), using wine yeast to make dough expand is called fermentation. The Book of Qi (Qi Shu) by Xiao Zixian records that in the first month of the ninth year of the Yongming era, an imperial decree stated that during the four seasonal sacrifices at the Grand Temple, steamed leavened cakes honoring Emperor Xuan should be offered. The commentary notes that this refers to fermentation. In the Food Menu (Shidan) by Wei Juyuan, there is a mention of Brahmin light raised-flour cakes; the modern steamed buns that rise after fermentation using yeast are of this type. During the first year of the Tianli era of the Jin dynasty, there was an additional tax, and the eighteenth item was called the fermentation tax. In the fourth year of the Taihe era, tax regulations for dregs and yeast were established. Both the official records of the Liao dynasty and the Yuan dynasty contain entries regarding the fermentation tax.
